We were on the road by 430am to get to #watkinsglen by 7. It rained the entire way (and the whole time we were there). The early morning and poor weather made for a good combination though. No other people and full waterfalls. Thankful for having a travel buddy who could quit her job to become a living statue. Thanks for embracing our mission of putting Syracuse on the map for its food! - - “The lamb, oh the lamb. When I found out there was lamb I was stoked. It’s possibly one of my favorite proteins, extremely underused in American cooking. While I was visiting friends in San Jose, California, we took a trip up to the Farmers Market at the Ferry Building in San Francisco. I was making dinner and couldn’t wait to play around with all this amazing food around me. I found a butcher, asked for lamb ribs (delicious cut by the way), and as he’s literally cutting me these portions he tells me how the farm this lamb was from was saved because of lamb grazing.The wildfires in California took out a lot of crops. Yet this farm raised sheep which graze just like cattle, but as cattle only take the grass down a little, sheep eat the grass all the way down. This created an unburnable buffer which literally saved this farm. If that alone isn’t reason for more lamb raising, I’m not sure what is! - - Anyways - The lamb instantly said meatball to me. My family is very Mediterranean, so lamb and spices like coriander, cumin, and paprika are very dear to me. What better vessel for a poached egg than a nice grilled portion of ground lamb. My grandmothers both would take peppers and sear them up and put on a little olive oil, salt, pepper and garlic. We would pretty much add it to anything, so why not take ramps and do the same! From searing them off we got some of the sweetness, but also brought that very nice onion/garlic combo that ramps are so great for. The organic blueberry aioli was another last minute add on. Chef Matt had made a regular aioli from the fresh eggs we had, and we both looked at each other and just said, “blueberry???” It added a slight creaminess to go with the poached egg, and a bit of tart to help balance everything out. Finally we just treated that beautiful arugula with a quick fry to crisp it up, and what an amazing garnish it came out to be! Also works with spinach as an FYI!” - Sal
